Vegie Turmeric Quinoa


1 cup water
1cup rinsed quinoa
1-2 tablespoons coconut oil or extra virgin cold pressed olive oil
1 medium red onion diced
1 ½ teaspoons celtic salt (from the health food shop) or ordinary salt
1 tablespoon curry powder
1 tablespoon turmeric
1 red bell pepper
1 cup broccolini
1 cup cauliflower
Serves 4

Cook quinoa as per instructions on packet.  Heat coconut oil in pan.  Add the diced onions , turmeric, curry powder and salt.  Saute for a couple of minutes.   Add ¼ to ½ cup water.   Add chopped vegetables and lightly sauté for about 5 minutes.  The water will reduce and produce a delicious sauce.   You can add more water if too dry.  Add the cooked quinoa and season with nutritional yeast if you desire.  You can add any type of chopped up meat to add extra protein.   It’s very easy to whip up, and experiment with different  veggies – get creative.
