Spelt Bread

SPELT BREAD

Ingredients:
500g SPELT FLOUR
10g FAST-ACTING DRIED YEAST
½ TEASPOON SEA SALT
50gG SUNFLOWER SEEDS
50g SESAME SEEDS
50g LINSEED
500ml WARM WATER

Description:
Heat the oven to 200 C
Mix all the ingredients in a large bowl, adding the water last.  Mix well (but don’t knead it like you would while making traditional bread) until it has a dough-like consistency.
Put into a greased loaf tin
Bake in the oven for an hour
Remove the loaf, turn it out of the tin and then return it to the oven without the tin for a further 5-10 minutes.   You will need a very sharp serrated knife.   Great arm workout.
More digestible than wheat and richer in nutrients, spelt bread is fast becoming the super food of breads.  Great with poached egg and coriander pesto on top.
