Raw Cacao Truffles


2 cups of ground raw almonds
¾ cup raw cacao powder or cacao nibs (from health food shop)
6 pitted dates
½ cup raisins
1 tablespoon coconut oil (from health food shop)
Pinch of celtic salt
3 tablespoons cold water
Shredded unsweetened coconut flakes


Soak almonds in water for 24 hours, rise well.  Let them dry out in bowl or on the lowest setting of your oven with the door cracked open.  Grind almonds in a food processor, add the cacao, dates, raisins, coconut oil and a pinch of sea salt.  Once everything is blended well, add the water to make the mixture moist.   Roll into small balls and roll in coconut flakes.  Put in the freezer to harden.  I keep them in the freezer.
