Carrot Cake

Ingredients:
400 grams grated carrot
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 teaspoons vanilla extract
5 eggs
3 tablespoons olive oil
½ cup honey (or 1 teaspoon stevia extract – a natural sweetner)
300 grams ground almonds or ¾ cup of coconut flour (purchase from health food shop)
1 teaspoon baking soda
1 cup raisins
1 cup walnuts or any chopped nuts

Directions:
Preheat oven to 170 C.  Combine the grated carrot, cinnamon, nutmeg, vanilla, eggs, oil and honey or stevia into a bowl.  Add the ground almonds, baking soda, raisins and walnuts.  Mix through until well combined.  Spoon the cake mix into a loaf tin.  Bake for 1 hour until cooked through.  Allow to cool and then remove from the tin.  It is best kept in the fridge.  Enjoy with natural yoghurt.
